Yummy Vegan Mince Pies

Only 4 days into the school holidays and my 7-year old son is already going stir crazy! Hasn’t helped that I’ve been a bit under the weather so less enthusiastic about wandering around outside in the cold so this afternoon I decided a spot of baking was in order.

I found a recipe for Vegan Mince Pies on veganeasy.org which I adapted only very slightly to suit my needs and which we set about making and which was very easy to follow and was perfect for making with my son as the recipe required short breaks in order to chill the pastry which helped with his very low concentration span!!

So here is our version:

Vegan Mince Pies

Made 10

– 150g plain flour

– 50g ground almonds

– 25g vegetable suet

– 50g vegan margarine

– Juice of half an orange (can squeeze in more to get right pastry texture)

– 1 jar of vegan fruit mincemeat (used just under half)

1) Place flour in a bowl and rub in the margarine and vegetable suet until it resembles breadcrumbs. Then add and mix in the ground almonds.

2) Add the juice and mix briefly into the flour until it starts to form a ball. Then use your hands to bring the mixture together and knead briefly until smooth.

3) Next place in plastic wrap (I used non-PVC food wrap) and chill in fridge for 15 minutes.

4) Roll the chilled pastry out thinly and cut approximately 10 circles. We didn’t have a cutter so we just used the top of a drinking glass from the cupboard which was a very effective alternative ;-)

IMG_48925) Place the circles onto a greased cake tin and refrigerate again for about 20 minutes. Any left over pastry can also be chilled and used to top the mince pies. At this point I pre-heated the oven to 180 degrees C.

6) After chilling for the second time fill the moulds with the mincemeat and then top with pastry (we cut little rounds using the top of a large shot glass ;-) or you could make a star or Christmassy shape – I will try this next time!

7) Bake for 15-20 minutes until just brown.

8) Remove from the oven and watch them disappear in less time than it took to bake them!!

Please note: What mine lacked in aesthetically pleasing appeal they MORE than made up for in taste. They were absolutely delicious when warm and still fab when cooled down :-) Plus I now have to make a second batch as I was intending to take these to my sister’s on Christmas Day and they’ve all gone!!
